Franciacorta Brut represents the soul of the company, it is the wine that has always been produced. For its production we assemble grapes from 55 different plots located in 11 municipalities of Franciacorta.

Winemaking

The whole grapes are pressed with a pneumatic press at very delicate pressures. During the vinification process, the must is separated into two fractions: flower must, which has the best quality characteristics and is used for the production of Franciacorta, and second-pressing must, which is not destined for bottling. Alcoholic fermentation is carried out in stainless steel tanks at a controlled temperature between 16 and 18 ° C. The base wine rests in vats until the spring following the harvest.
