Franciacorta Extra Brut docg 2012

Vineyards of origin

Franciacorta Extra Brut is part of the company's reserves and for its production we choose grapes from the oldest vineyards in total are assembled 12 vineyards located in 6 municipalities of Franciacorta.

Winemaking

The whole grapes are pressed with a pneumatic press at very delicate pressures. During the vinification process, the must is separated into two fractions: flower must, which has the best quality characteristics and is used for the production of Franciacorta, and second-pressing must, which is not destined for bottling.

Alcoholic fermentation takes place in stainless steel tanks at a controlled temperature of between 16 and 18 °C. The base wine rests in vats until the spring following the harvest.
