Vineyards of origin

The Riserva 33 is an "assemblage of assemblage", the wine base before the intake of foam, is in fact composed for 33% each of the bases saten, milledium and extra brut. The total number of vineyards assembled in this wine is about 40 different plots located in 8 municipalities of Franciacorta.

Winemaking

The whole grapes are pressed with a pneumatic press at very delicate pressures. During the vinification process, the must is separated into two fractions: flower must, which has the best quality characteristics and is used for the production of Franciacorta, and second-pressing must, which is not destined for bottling. Alcoholic fermentation is carried out in stainless steel tanks at a controlled temperature between 16 and 18 ° C. The base wine rests in vats until the spring following the harvest.
